Eating Gluten Free

What is Gluten?

Gluten is one of the main proteins found in grains such as wheat, barley, & rye. It is also added to stabilize certain foods such as ketchup, hot sauce, & ice cream. The intestinal tract of some individuals is sensitive to gluten, causing inflammation and damage to the surface of the intestines. This stops various nutrients from being absorbed by the intestines. Individuals suffering from gluten intolerance or celiac disease must avoid gluten. Please consult a physician about diagnosing and resources for dealing with celiac disease.
What foods are safe?

There are many foods that are appropriate for gluten free diets including:
  • Rice, potatoes, quinoa, sweet potato, millet, amaranth
  • Most dairy products
  • Fruits and vegetables
  • Fresh meats, fish, & poultry
  • Gluten free flours (soy, corn, rice, & potatoes)
Gluten ends up in various products we might not expect, so reading the label is very important.
How do you know if a product is gluten free?

Most foods that are gluten free will have a label noting that it is gluten free, but if not check the ingredient list to be safe.
